INGREDIENTS

  • 4 slices thick-cut bacon, chopped

  • 6 scallions (white and light green parts separated from dark green parts)

  • 2 lb. sweet potato, peeled and cut into 3/4-inch pieces

  • 1 red bell pepper, roughly chopped

  • 1 1/2 tsp. kosher salt

  • 1 1/2 tsp. paprika

  • 1 tsp. cumin

  • 1/4 tsp. garlic powder

INSTRUCTIONS

STEP 1: Cook chopped bacon in a large cast iron skillet over medium heat until crisp and rendered (8-10 minutes). Slice scallions.

STEP 2: Transfer bacon to a paper towel-lined plate, keeping drippings in the skillet. Add sweet potatoes, bell pepper, and scallion whites/light greens to the skillet. Cook until slightly softened (about 10 minutes).

STEP 3: Stir in 1/2 cup of water, salt, paprika, cumin, and garlic powder. Cover and cook until potatoes are mostly tender (8-12 minutes).

STEP 4: Uncover and increase heat to medium-high. Cook until potatoes are tender and browned in spots, and liquid has evaporated (5-7 minutes).

STEP 5: Stir in reserved bacon and scallion greens. Serve and enjoy!
