INGREDIENTS

  • 1 large chicken breast, halved lengthwise

  • ¼ teaspoon garlic powder

  • Salt and pepper to taste

  • extra virgin olive oil

  • ½ tablespoon butter

  • 1 to 2 cloves minced garlic

  • ¼ cup chicken broth

  • 150 g cherry tomatoes, halved

  • 1/8 cup pesto

  • ¼ teaspoon Italian seasoning

    ½ cup shredded mozzarella cheese

  • Fresh basil for garnish (optional)

INSTRUCTIONS

STEP 1: Preheat the oven to 200°C.

STEP 2: Season the chicken with garlic powder, salt, and pepper. In a large oven-safe skillet, melt the butter in the olive oil. Fry the chicken for 4 to 5 minutes per side until lightly golden. Set the chicken on a plate.

STEP 3: Add the minced garlic, broth, and Italian seasoning to the skillet. Stir in the pesto sauce and add the tomatoes. Cook for 3 to 5 minutes until the tomatoes soften.

STEP 4: Remove the skillet from the heat and transfer the mixture to a baking dish. Add the chicken too. Sprinkle with mozzarella.

STEP 5: Place the baking dish in the oven. Bake for 5 minutes. Switch the oven to broil and broil until the cheese browns.
