Banana Quinoa Pudding

Banana Quinoa Pudding is a lusciously creamy dessert, akin to tapioca or rice pudding. This easy, wholesome recipe is open to various flavor enhancements, including chocolate, cinnamon, and more.

INGREDIENTS

  • 2 cups cooked quinoa (2/3 cup dry)

  • 1 1/2 cups of milk

  • 3 ripe bananas

  • 1/4 cup melted butter or margarine

  • 2 Tbsp vanilla extract

  • 1 pinch of salt

INSTRUCTIONS

STEP 1: Mix the milk into the cooked quinoa and allow it to soak while you prepare the remaining ingredients.

STEP 2: Puree the ripe bananas until they're smooth.

STEP 3: Blend the melted butter, vanilla, and a pinch of salt into the pureed banana. Then, add this mixture to the soaking quinoa, along with any additional flavors you desire. At this stage, you can opt to keep the quinoa whole or blend it with a blender or immersion blender until it's smooth.

STEP 4: Taste the mixture and add a touch of honey or maple syrup if you prefer it sweeter.

STEP 5: Let the pudding rest for at least 15-30 minutes, allowing the quinoa to absorb the liquid. Serve it either chilled or warm. Enjoy!
