  • 1 onion

  • 2 tablespoons olive oil

  • 1/4 teaspoon thyme

  • 1 tablespoon parsley

INSTRUCTIONS

  1. COOK THE BUCKWHEAT

    • Rinse the buckwheat under running water in a sieve.

    • Transfer the buckwheat to a pot and add water.

    • Season with salt and bring to a boil over medium heat.

    • Once boiling, reduce the heat, cover with a lid, and cook for 12 minutes.

    • When done, cover with a lid and set aside.

  2. PREPARE THE VEGETABLES

    • Peel and dice the carrots into small cubes.
