  • 1/2 red bell pepper

  • 1 chicken breast (shredded)

  • Spices: 1/2 teaspoon ground cumin, 1/2 teaspoon ground coriander, 1/2 teaspoon ground paprika, 1/4 teaspoon garlic powder

  • 150 g (2/3 cup) salsa sauce - medium-spicy

  • 60 g (1/3 cup) red beans

  • 60 g (1/3 cup) corn

  • 3 eggs

  • 60 g (1/2 cup) cheese

  • 30 g (2 tablespoons) butter

  • 2 large wheat tortillas

  • 1 tablespoon chopped cilantro or parsley

INSTRUCTIONS

  1. Prepare the Rice:

    • Cook long-grain rice according to package instructions. Set aside.

  2. Prepare Vegetables:

    • Chop green, yellow, and red bell peppers, as well as the onion, into small pieces.
