INGREDIENTS

  • 1/3 cup quinoa

  • 1/3 cup chocolate chips (any type)

INSTRUCTIONS

To Pop Quinoa:

  1. Moisten quinoa with a 4:1 ratio of quinoa to water or soak it overnight.

  2. Heat a small pan over medium-high heat.

  3. Place 1 tablespoon of moistened quinoa into the pan.

  4. Quinoa should pop within 15 seconds; remove when golden and toasty. This takes 15-30 seconds.

  5. Let it cool for a few minutes.

To Make Chocolate Quinoa Bars:

  1. Melt chocolate chips in the microwave for 60 seconds or use a double boiler.

  2. Mix popped quinoa into melted chocolate.

  3. Spread the mixture in a lined container (6" x 4" to 7.5" x 5.5") with parchment paper, leaving extra for easy removal.

  4. Smooth the top and add extra popped quinoa if desired.

  5. Freeze for 20 minutes until hardened.

  6. Remove bars from the container using the parchment.
