Peel and finely chop the garlic and onion. Rinse the chickpeas under running water and drain. Rinse the spinach under running water and dry it. Peel the sweet potato and cut it into pieces.
Place a pot on the stove and heat the olive oil (or coconut oil). Add the onion, garlic, and grated ginger, and sauté the ingredients for 5 minutes while stirring. Stir in the chickpeas, sweet potato, and tomatoes, then pour in the coconut milk. Mix well and bring to a boil, then reduce the heat to medium and simmer the curry for 15 minutes.
After 15 minutes of cooking, add the spices: garam masala, cumin, and turmeric. Season the curry with salt to taste, and if desired, add a little chili.
Roughly chop the spinach and stir it into the curry. Cook everything together for about 5 minutes until the spinach softens, then serve the prepared dish in deep plates or bowls. Serve the curry with cooked rice or chapatis, and accompany it with a lime wedge, which nicely refreshes the dish.
