INGREDIENTS

  • 125 g rice noodles

  • 1 tablespoon sesame oil

  • 100 g mushrooms

  • 100 g peas

  • 1 carrot

  • 1 red bell pepper

  • 1 piece of onion (or 1 spring onion)

  • 1 teaspoon curry powder

  • Cilantro for garnish

  • Chili to taste for garnish (optional)

Ingredients for soy sauce:

  • 2 dl water

  • 4 tablespoons soy sauce

  • 3 tablespoons white wine

  • 1/2 teaspoon brown sugar

  • 1/2 small garlic clove

  • 1 piece of fresh ginger

INSTRUCTIONS

  1. Preparing the vegetables: Slice the bell pepper, carrot, onion, and mushrooms into thin strips.

  2. Soy sauce: Grate garlic and ginger into a small bowl, add soy sauce, wine, sugar, and water.

  3. Noodles: Prepare rice noodles according to the package instructions.

  4. Vegetables: In a large pan or wok, heat sesame oil, then add mushrooms. Sauté until most of the water released by the mushrooms evaporates. Add bell peppers, carrots, and onions, sprinkle with curry powder, and sauté until the vegetables soften – about 5 minutes, stirring frequently. Then add peas and 2 tablespoons of soy sauce, and cook for an additional two minutes.

  5. Combining everything: Transfer the drained rice noodles to the pan, add the remaining soy sauce, and mix well. Cook for a few more minutes while stirring, allowing the noodles to heat through, and ensuring the sauce is distributed evenly among all ingredients. The dish should be very moist.

  6. Garnish with chopped cilantro and serve immediately. If desired, sprinkle with chili flakes.
