INGREDIENTS

  • 200 g couscous

  • 1 green bell pepper

  • 1 zucchini

  • 8 cherry tomatoes

  • 1 spring onion

  • 2 carrots

  • 50 g toasted almonds

  • 50 g cashew nuts

  • 2 tablespoons olive oil

  • 1 teaspoon salt

INSTRUCTIONS

STEP 1: Place couscous in a bowl, add a pinch of salt, and mix. Boil half a liter of water and pour it over the couscous. Cover the bowl and let the couscous absorb the water and fluff up.

STEP 2: Wash and dry the bell pepper, tomatoes, zucchini, and spring onion. Remove the seeds from the bell pepper and cut it into smaller pieces. Halve the zucchini and cut it into quarters. Cut the tomatoes in half, and slice the spring onion into rings. Peel and cut the carrots into smaller pieces.

STEP 3: Heat olive oil in a wok and sautรฉ all the chopped vegetables for about seven minutes, stirring occasionally. You can sautรฉ the vegetables for a few extra minutes if you prefer them more cooked, but it's good to keep them slightly crisp. Stir in the couscous into the sautรฉed vegetables, mix well, and season with salt to taste.

STEP 4: Remove the wok from heat and fold in the toasted almonds and cashew nuts into the couscous mixture.
