INGREDIENTS

  • 1 tablespoon olive oil

  • 0.5 yellow bell pepper

  • 0.5 small onion

  • 12 cherry tomatoes

  • 240 ml broth (or hot water with dissolved bouillon cube)

  • 150 g couscous

  • 1 tablespoon butter

  • 1 garlic clove

  • 16 shrimp tails (peeled and deveined)

  • 2 tablespoons lemon juice

  • Salt and ground pepper A pinch of chili flakes (optional)

INSTRUCTIONS

STEP 1: Clean and wash the vegetables. Cut the bell pepper into pieces, halve the tomatoes, and finely chop the onion.

STEP 2: In a sufficiently large pan or pot, heat the olive oil. Add the onion and bell pepper, and sauté over medium heat for 3-5 minutes, stirring, until the vegetables soften slightly. Add the tomatoes and sauté for an additional 1 minute.

STEP 3: Pour the broth over the vegetables and let it come to a boil. Remove from heat and stir in the couscous. Cover the pan or pot and let it stand for about 5 minutes, allowing the couscous to absorb all the liquid and fluff up.

STEP 4: Meanwhile, peel and finely chop the garlic. Melt the butter in the pan and sauté the garlic until fragrant. Add the shrimp tails and sauté for 2 minutes, then season with salt and lemon juice (add a bit of chili flakes if desired) and flip the shrimp. Let the shrimp sauté for an additional 2 minutes.

STEP 5: Once the couscous has absorbed the liquid, fluff it with a fork to separate the grains. Mix in the sautéed shrimp, and if needed, add a bit more salt. Serve the prepared dish on plates and enjoy!
