  • 30 millilitres extra-virgin olive oil, plus more for drizzling

  • 2 cloves garlic, peeled and minced

  • 100 grams smoked bacon lardons

  • 1 medium-sized corn on the cob or 50 grams tinned/frozen sweetcorn

  • Flour, for dusting and stretching

  • 180 millilitres barbecue sauce

  • 250 grams a fresh mozzarella, shredded

  • Half a red onion, thinly sliced

  • 4 grams fresh coriander, finely chopped (optional)

🍽️ Directions

Preheat the oven:

Preheat your oven to the temperature recommended on the store-bought pizza dough packaging.

Prepare the toppings:

a. In a skillet, heat the olive oil over medium heat. Add the minced garlic and smoked bacon lardons. Cook until the bacon is crispy and golden. Remove from heat and set aside.

b. If using fresh corn on the cob, carefully remove the kernels from the cob using a sharp knife. If using tinned or frozen sweetcorn, thaw and drain it.

Prepare the pizza dough:

Follow the instructions on the store-bought pizza dough packaging for stretching and shaping the dough. Dust your work surface with flour and stretch the dough to your desired thickness.

Assemble the pizza:

a. Place the stretched pizza dough on a baking sheet or pizza stone.

b. Drizzle a little extra-virgin olive oil over the surface of the dough.

c. Spread a layer of barbecue sauce evenly over the dough, leaving a small border around the edges.

d. Sprinkle the shredded mozzarella cheese over the sauce.

e. Distribute the cooked bacon and garlic mixture, sweetcorn, and thinly sliced red onion over the cheese.

Bake the pizza (15 mins):

Place the pizza in the preheated oven and bake according to the instructions on the store-bought pizza dough packaging, or until the crust is golden and the cheese is melted and bubbly.

Bake the pizza with Ooni (60 SECONDS):

Slide the pizza into your Ooni. Cook for 1 to 2 minutes, using the peel to turn your pizza every 20 seconds to ensure an even bake. Remove the cooked pizza from the oven.

Finish and serve:

Once the pizza is out of the oven, drizzle a little more extra-virgin olive oil over the top. If using, sprinkle the finely chopped fresh coriander over the pizza for an extra burst of flavor.
