INGREDIENTS

  • 2 salmon fillets

  • Salt and black pepper to taste

  • Vegetable oil for frying

  • 1/2 onion, finely chopped

  • 3 cloves of garlic, minced

  • 1 lemon

  • 30g Parmesan cheese, grated

  • 70-100g spinach

  • 2-3 tablespoons olive oil

  • 25g butter

  • 100ml dry white wine

  • 200ml heavy cream (15-20% fat)

  • 1 carrot, grated

  • 1 cup rice

  • Pinch of turmeric

  • 2 cups water

INSTRUCTIONS

  1. Season the salmon fillets with salt and black pepper.

  2. Heat vegetable oil in a pan over medium heat. Fry the salmon fillets for 1-2 minutes on each side until golden brown. Remove from the pan and set aside.

  3. In the same pan, add chopped onion and minced garlic. Sautรฉ until fragrant.

  4. Add the juice of half a lemon, grated Parmesan cheese, and spinach to the pan. Cook until the spinach wilts.

  5. Push the spinach mixture to one side of the pan and add olive oil and butter to the space. Once melted, pour in the white wine and let it simmer for a minute.

  6. Stir in the heavy cream, salt, and black pepper. Return the salmon fillets to the pan, spooning some of the sauce.

  7. Cover and simmer for 7-15 minutes, depending on the thickness of your fillets, until the salmon is cooked through and flakes easily with a fork.

  8. In another pan, heat vegetable oil and sautรฉ grated carrot and chopped onion until tender.

  9. Add rice, turmeric, salt, and water to the pan. Bring to a boil, then reduce heat, cover, and simmer until the water has evaporated and the rice is cooked.

  10. Serve the creamy salmon fillets with spinach sauce alongside the fluffy turmeric rice.
