How to Make Easy Avocado and Black Bean Quesadillas 

🍽️ Ingredients

  • For the avocado mash:

  • 2 large or 3 small avocados

  • Juice from 1/2 lime

  • Pinch of kosher salt

  • For the quesadillas:

  • 2 tablespoons olive oil, divided

  • 1 cup red onion, sliced into 1/4-inch half-moons

  • 1/2 teaspoon kosher salt

  • 1 1/2 teaspoons dried oregano

  • 1/2 yellow, red, or orange bell pepper, deseeded and chopped into 1/2-inch pieces

  • Juice from 1/2 lime

  • 1 (15.5-ounce) can of black beans, drained and rinsed

  • 4 (8-inch) flour tortillas

  • 1 cup queso fresco, crumbled or grated

  • 1 cup sharp cheddar cheese, grated

🍽️ Directions

  1. For the avocado mash:

    In a small bowl, use a fork to mash the avocados to a chunky yet spreadable consistency.

    Squeeze the juice from 1/2 lime over the mashed avocado.

    Add a pinch of kosher salt and mix well. Set aside.

  2. For the quesadillas:

    In a skillet, heat 1 tablespoon of olive oil over medium heat.
