🍽️ Directions
For the avocado mash:
In a small bowl, use a fork to mash the avocados to a chunky yet spreadable consistency.
Squeeze the juice from 1/2 lime over the mashed avocado.
Add a pinch of kosher salt and mix well. Set aside.
For the quesadillas:
In a skillet, heat 1 tablespoon of olive oil over medium heat.
Add the red onion and sauté until softened, about 3 to 4 minutes.
Sprinkle in 1/2 teaspoon of kosher salt, dried oregano, and chopped bell pepper. Cook for another 3 minutes.
Squeeze the juice from 1/2 lime over the mixture and stir.
Add the drained and rinsed black beans to the skillet, and warm the mixture for about 2 minutes. Remove from heat.
Assemble the quesadillas:
Lay out the 8-inch flour tortillas on a clean surface.
Divide the avocado mash between the tortillas and spread it evenly.
Sprinkle a generous amount of queso fresco and sharp cheddar cheese over the avocado layer.
Spoon the prepared black bean and onion mixture over the cheese.
Cook the quesadillas:
Fold each tortilla in half to encase the fillings.
In a skillet, heat the remaining tablespoon of olive oil over medium-high heat.
Place the folded tortillas in the skillet and cook for 2 to 3 minutes on each side, until the tortillas are crispy and the cheese has melted.
To serve:
Remove the quesadillas from the skillet and cut each into halves or quarters.
Serve with a dollop of sour cream and a side of pico de gallo or salsa.
Enjoy your delicious and satisfying Avocado and Black Bean Quesadillas!
