INGREDIENTS

  • 250g pork mince

  • ยฝ tsp oregano

  • 2 tortilla wraps

  • tzatziki, for serving

  • ยฝ little gem lettuce, finely chopped

  • 1 tomato, deseeded and finely chopped

  • ยฝ small red onion, finely sliced

  • 25g salad cheese, crumbled

INSTRUCTIONS

  1. Divide the mince into 2 portions and sprinkle ยผ tsp of oregano, a pinch of salt, and a grinding of pepper over each portion. Shape into 2 balls, evenly dispersing the seasoning.

  2. Using your fingers, spread each ball of mince onto a tortilla wrap to cover it, leaving a 1 cm border.

  3. Heat a frying pan over medium-high heat (no oil needed, the mince releases fat) and place the wraps meat-side down. Cook for 4-5 minutes with a lid on until the meat is golden and the edges of the wrap are toasted.

  4. Flip over and toast the other side of the wrap for 1-2 minutes.

  5. Slide onto a board and top with a dollop of tzatziki, the finely chopped lettuce, tomato, and red onion, and crumble over the salad cheese.

  6. Serve with a sprinkle of extra oregano, fold in the bottom, then roll in the sides, and wrap in foil. Enjoy!
