INGREDIENTS

  • 1 cup couscous

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 1 garlic clove, minced

  • 1 small zucchini, diced

  • 1 small red (yellow, green) bell pepper, diced

  • 1/2 cup cherry tomatoes, halved

  • 1/2 cup chickpeas (cooked or canned, drained and rinsed)

  • Hokkaido pumpkin

  • Optional: meat of your choice

  • 1 teaspoon ground turmeric

  • 1/4 teaspoon paprika

  • Salt and pepper to taste

  • 1 1/4 cups water

  • 2 tablespoons chopped fresh parsley or cilantro (for garnish)

INSTRUCTIONS

STEP 1: Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.

STEP 2: Toss diced Hokkaido pumpkin, bell pepper, zucchini, and cherry tomatoes in olive oil, turmeric, paprika, salt, and pepper.

STEP 3: Roast the seasoned vegetables for 25-30 minutes until tender.

STEP 4: In a separate skillet, sautรฉ onion and garlic. Cook couscous according to package instructions.

STEP 5: While couscous is cooking, optionally sautรฉ the meat in the skillet until fully cooked.

STEP 6: Combine roasted vegetables, cooked chickpeas, couscous, and sautรฉed meat.
