STEP 1: Preheat your oven to 200°C (400°F).
STEP 2: Peel and chop the half of a small pumpkin, two small carrots, half of a zucchini, half of an onion, a garlic clove, and a small piece of ginger.
STEP 3: In an oven-proof dish, combine all the ingredients: chopped pumpkin, carrots, zucchini, onion, garlic, ginger, chopped tomatoes, coconut milk, water, drained chickpeas, and all the spices. Mix well.
