INGREDIENTS

  • 1/2 tablespoon extra virgin olive oil

  • 1/2 small brown onion, chopped

  • 1/2 small carrot, finely chopped

  • 1/2 stalk celery, finely chopped

  • 2 shortcut bacon rashers, trimmed, chopped

  • 1 garlic clove, finely chopped

  • 300g beef mince

  • 2 tablespoons tomato paste

  • 1 x 410g can crushed tomatoes

  • 1 1/2 cups Massel salt reduced chicken style liquid stock

  • 3 sprigs fresh thyme

  • 200g spaghetti

  • 2 tablespoons chopped fresh parsley leaves

  • Extra chopped fresh flat-leaf parsley, to serve

  • Grated parmesan, to serve

INSTRUCTIONS

  1. Heat oil in a medium-sized heavy-based flameproof casserole dish or non-stick saucepan over medium-high heat. Add onion, carrot, and celery. Cook, stirring occasionally, for about 2 minutes or until the onion starts to soften. Add bacon and cook for another 2 minutes or until golden. Add garlic and stir to combine.

  2. Add mince to the dish. Cook, breaking up mince with a wooden spoon, for about 3-4 minutes or until browned all over. Stir in tomato paste, crushed tomatoes, chicken stock, and thyme sprigs. Cover and bring to a boil.

  3. Add spaghetti to the dish. Reduce heat to medium. Simmer, uncovered, for about 12-15 minutes or until spaghetti is tender and the sauce has thickened, stirring occasionally.

  4. Remove pot from heat. Remove and discard thyme sprigs. Add parsley and season with salt and pepper. Stir to combine.

  5. Serve topped with extra chopped parsley and grated parmesan.
