  • 310.5 ounces (about 2 cups) of your favorite pasta

  • 7 ounces (about 1.4 cups) frozen peas

  • 1.4 ounces (about 1/2 cup) Parmesan cheese

  • 1.4 ounces (about 1/4 cup) pine nuts (optional)

  • 1.4 fluid ounces (about 3 tablespoons) olive oil

  • 2 cloves of garlic

  • 1 teaspoon of lemon juice

  • 4.2 ounces (about 4.2 tablespoons) Burrata cheese

  • 3.5 ounces (about 3.5 slices) of prosciutto (optional)

INSTRUCTIONS

Cook the Pasta and Peas:

  • In a large pot, bring salted water to a boil. Once boiling, add the pasta and cook it al dente according to the package instructions.

  • While the pasta is cooking, place a colander in the pot, making sure it's in the water, and add the frozen peas to the colander. Allow the peas to cook for 2-3 minutes alongside the pasta.

  • Transfer the cooked peas to a blender. Before draining the pasta, reserve 120ml of the cooking water.

Prepare the Pesto:

  • To the blender with the peas, add Parmesan cheese (broken or grated), pine nuts (optional), olive oil, garlic, lemon juice, and the reserved pasta cooking water.

  • Blend until you achieve a smooth and creamy pesto. Season with salt and pepper to taste.

  • Transfer the pesto to a larger pan, add the cooked and hot pasta, and mix well to combine the sauce with the pasta. Add some more cooking water if needed to reach your desired consistency.

Serve:

  • Divide the pasta with peas and Burrata pesto among four plates.

  • Crumble Burrata cheese over each serving.

  • Optionally, add slices of prosciutto on top.

  • Optionally, drizzle with olive oil and garnish with a few mint leaves.
