Pea Ricotta Toast with Almonds
Indulge in our Pea Ricotta Toast with Almondsโan Avocado toast alternative for those not keen on avocado but craving delightful flavors.
Ingredients:
200g frozen green peas
15 leaves fresh mint
10 chives, chopped
Fresh dill (to taste)
Lime zest (from one lime)
0.5 lime (juiced)
2 cloves garlic
1 tablespoon tahini
Salt (to taste)
Ground black pepper (to taste)
3 tablespoons olive oil
1 slice of sourdough bread
Ricotta cheese (for topping)
Almonds (for topping)
Instructions:
Step 1: Blanch the Peas
In a pot of generously salted boiling water, blanch the frozen green peas for 1 to 2 minutes until slightly softened.
Step 2: Prepare the Pea Mixture
Combine blanched peas, fresh mint leaves, chopped chives, fresh dill, lime zest, lime juice, garlic cloves, tahini, salt, black pepper, and olive oil in a food processor.
Blend until a relatively smooth paste is formed.
Step 3: Toast the Sourdough Bread
Toast a thick slice of sourdough bread in a generous amount of olive oil on both sides.
Rub one clove of garlic onto both sides of the bread for extra flavor.
Step 4: Assemble the Toast
Spread the pea mixture evenly on top of the toasted sourdough slice.
Add dollops of ricotta cheese to the pea mixture.
Sprinkle chopped almonds on top for an extra crunch.
