Quick Breakfast Tacos
Ingredients:
4 tortillas
4 eggs
1 tomato, diced
1 avocado, sliced
Salt to taste
Freshly ground black pepper to taste
Salsa (optional)
Chopped fresh herbs (e.g., cilantro) for garnish
Instructions:
Heat a non-stick skillet over medium heat.
Add the tortillas to the skillet and heat them according to preference, about 1 minute on each side until warmed through.
Meanwhile, crack the eggs into another skillet over medium heat and cook to your desired level of firmness.
When the eggs are nearly done, place a portion of the egg mixture onto each tortilla.
Top the eggs with diced tomato and avocado slices.
Season with salt and pepper to taste.
Optionally, add a spoonful of salsa to each taco.
Sprinkle with chopped fresh herbs for garnish.
Fold the tortillas and serve immediately.
