For salmon patties wash the salmon fillets and pat them dry thoroughly with paper towels. Peel and finely chop the garlic. Wash, dry, and finely chop the parsley sprigs.
Cut the fillets into smaller pieces and finely chop them in a food processor. Transfer the minced fish meat to a bowl and mix it with beaten egg, breadcrumbs, chopped garlic, salt, ground red pepper, and chopped parsley.
With moist hands, shape the mixture into patties of any size.
Wash and dry lettuce leaves. Wash tomatoes and slice them into rounds.
