INGREDIENTS

  • 1 ยฝ cups dried quinoa

  • 2 medium-sized sweet potatoes, diced

  • 2 tbsp extra virgin olive oil

  • 1 cup corn kernels (fresh or frozen)

  • ยฝ cup red kidney beans drained and rinsed

  • ยผ cup chopped cilantro

  • Salt and pepper to taste

  • For the Dressing:

    • ยผ cup plain Greek yogurt

    • 1 tsp garlic powder

    • Juice of half a lime

    • Salt and pepper to taste

INSTRUCTIONS

  1. Preheat the oven to 425 degrees (F).

  2. Cook the quinoa according to package directions. Once done, drain and set aside.

  3. While the quinoa is cooking, prepare the sweet potatoes.

  4. Spread the diced sweet potato on a baking sheet. Toss with olive oil, salt, and pepper. Roast in the oven for about 15 minutes, or until tender and slightly caramelized.
