INGREDIENTS

  • 40 g Gouda or Cheddar cheese

  • 2 slices of smoked ham

  • 8 fresh chives

  • 100 g ripe cherry tomatoes

  • English mustard, to taste

  • 8 tablespoons strong white bread flour

  • 2 level teaspoons baking powder

  • 2 tablespoons natural yoghurt

  • Olive oil

INSTRUCTIONS

  1. Prepare the Filling: Grate the cheese. Tear the ham. Finely chop the chives. Quarter the cherry tomatoes.

  2. Make the Flatbread: Put a 24cm non-stick frying pan on a medium heat. In a bowl, whisk together the flour, baking powder, yogurt, and a pinch of sea salt with 8 tablespoons of water until smooth.

  3. Cook the Flatbread: Drizzle a little olive oil into the hot pan. Use half of the batter to spread across the base of the pan evenly. Cook until the top starts to bubble, then loosen the edges with a spatula.

  4. Add the Topping: Sprinkle half of the grated cheese over one-half of the flatbread. Top with one slice of torn ham, half of the chopped chives, and half of the quartered cherry tomatoes. Add English mustard to taste and a pinch of black pepper.

  5. Fold and Cook: Fold the other half of the flatbread over the toppings. Reduce the heat to low and cook for 2 minutes more on each side or until golden brown.

  6. Repeat: Repeat steps 2 to 5 with the remaining ingredients to make the second flatbread.

  7. Serve: Slide the flatbreads out of the pan, let them cool for a minute, then slice and enjoy!
