Prepare Spelled: Rinse the spelled thoroughly. For each cup of spelt, use 5 to 6 cups of water. Place the spelled into boiling, salted water and cook it over medium heat for 20 to 30 minutes until it's tender.
Sautee the Vegetables: In a pan, sautรฉ the chopped onion until it's translucent. Add the minced garlic and continue to sautรฉ.
Slice the Peppers: Slice both the red and yellow bell peppers into strips. Slice the leeks or spring onions into rings.
Add the Vegetables: Add the sliced vegetables to the sautรฉed onion and garlic. Season according to your taste and let them simmer.
