INGREDIENTS

  • 1 tablespoon olive oil

  • 1/2 medium onion

  • 1/4 red bell pepper

  • 1/4 green bell pepper

  • 1 clove garlic

  • 250g ground meat (beef, mixed, or chicken)

  • 1.25 tablespoons tomato paste

  • 1/4 teaspoon ground cumin (optional)

  • Salt and pepper to taste

  • Pinch of cayenne pepper

  • 1/2 bay leaf

  • 115g long-grain rice

  • 250ml beef, chicken, or vegetable broth

  • 1 handful frozen corn

  • 95g canned red beans

INSTRUCTIONS

  1. Peel and finely chop the garlic and onion. Remove the seeds from the bell peppers, then wash and dice them. Rinse the beans under cold water and drain them well.

  2. Heat the olive oil in a large pot over medium heat. Add the onion, bell pepper, garlic, and sautรฉ for 1 minute, stirring constantly.

  3. Add the ground meat. Cook with the vegetables until it breaks apart into pieces and lightly brown.

  4. Stir in the cumin, salt, pepper, cayenne pepper, and tomato paste. Sautรฉ for another minute, stirring constantly.

  5. Add the rice and pour in the broth. Adjust the heat to medium, then add the frozen corn and bay leaf to the pot. Cover and reduce the heat to a simmer. Cook the rice covered for 15-20 minutes, adding the red beans for the last 5 minutes. Add more liquid if needed during cooking.

  6. Once the rice is cooked, remove the pot from the heat. Let the rice stand for 2 minutes, then season to taste and serve on plates. Enjoy with a side of salad
