How to Make Spinach Frittata

  • 1.25 tablespoons olive oil

  • 0.5 small onion (or 1/2 large onion)

  • 200g fresh spinach

  • 3 large eggs

  • 3 tablespoons milk

  • 25g grated Parmesan

  • A pinch of salt

  • 0.5 pinch of freshly ground black pepper

STEP 1: Prepare Spinach: Clean, wash, and remove stems from the spinach. In a large pot, bring lightly salted water to a boil. Add spinach to the boiling water and cook just until the leaves wilt (approximately 2 minutes). Drain and cool the spinach.

STEP 2: Prepare Onion: Peel and halve the onion. Slice both halves thinly. In a pan, heat one tablespoon of olive oil and sautรฉ the onion until translucent. Remove the pan from heat and let the onions cool slightly.

STEP 3: Preheat Oven: Preheat the oven to 170 degrees Celsius (340 degrees Fahrenheit).

STEP 4: Prepare Egg Mixture: In a large bowl, beat the eggs thoroughly with a whisk. Add milk, salt, pepper, and grated Parmesan. Mix the ingredients well.

STEP 5: Prep Spinach and Onion: Squeeze excess liquid from the cooled spinach using your hands and finely chop it. Add the chopped spinach to the egg mixture. Stir in the sautรฉed onions and mix all the ingredients well.

STEP 6: Cooking on Stovetop: In a deep skillet with a heatproof handle, heat olive oil. Reduce the heat to a minimum and pour the egg mixture into the pan. Do not stir. Allow the frittata to cook on low heat for 5 to 6 minutes until the bottom becomes lightly brown.

STEP 7: Finish in the Oven: Transfer the pan to the preheated oven for 10 minutes to allow the frittata to cook on top. Serve with bread and your choice of salad.
