INGREDIENTS

  • 1 small cauliflower head, chopped into florets (approximately 6 1/2 cups)

  • 1/3 cup low-sodium soy sauce

  • 1/4 cup rice vinegar

  • 1 tablespoon minced garlic

  • 1 ยฝ teaspoons toasted sesame oil

  • 1/2 teaspoon powdered ginger

  • 1 1/2 tablespoons cornstarch or arrowroot

  • 1/4 cup water

  • Sesame seeds and scallions, for garnish

INSTRUCTIONS

  1. Preheat your oven to 450ยฐF (230ยฐC). Grease a baking pan or line it with parchment paper. Cut the cauliflower into florets, ensuring that one side of each floret is flat. Arrange them in a single layer on the greased pan. Bake for 10 minutes on the center rack.

  2. While the cauliflower is baking, in a saucepan, whisk together the soy sauce, maple syrup (or honey/agave), rice vinegar, minced garlic, sesame oil, and powdered ginger. Bring the mixture to a boil.

  3. While waiting for the sauce to boil, mix the cornstarch or arrowroot with water until fully dissolved. Once the saucepan mixture is boiling, slowly whisk in the cornstarch mixture. Reduce the heat to medium and cook for 2 minutes, stirring frequently until the sauce thickens. The sauce can be prepared in advance and will thicken further when refrigerated.

  4. After 10 minutes of baking, flip the cauliflower florets and bake for an additional 10 minutes. Optionally, you can move the pan to the top rack and broil for 1-2 minutes for additional browning.

  5. Pour the prepared sauce over the cauliflower florets. Garnish with sesame seeds and sliced scallions if desired, then serve.
