  • 1/2 small onion, finely chopped

  • 1 clove garlic, minced

  • 1/2 can (7 ounces) diced tomatoes

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried basil

  • Salt and pepper to taste

  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)

  • Fresh parsley for garnish (optional)

INSTRUCTIONS

Prep the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them inside and out. Set aside.

Cook the Rice: Prepare 1/2 cup of cooked rice according to package instructions. Set aside.

Sautรฉ Meat and Onions: In a skillet over medium heat, cook the ground beef or turkey until it's no longer pink. Break it apart as it cooks. Add the finely chopped onion and minced garlic, and cook for a few more minutes until the onion becomes translucent.

Add Tomatoes and Spices: Stir in the diced tomatoes (including the juice), dried oregano, dried basil, salt, and pepper. Let it simmer for about 5 minutes until the mixture thickens slightly.

Combine with Rice: Add the cooked rice to the meat and tomato mixture. Mix everything together thoroughly.

Stuff the Peppers: Stuff each bell pepper with the meat and rice mixture, pressing down gently to ensure they are well-filled.

Add Cheese: Sprinkle shredded cheese over the tops of each stuffed pepper.

Microwave or Bake: Place the stuffed bell peppers in a microwave-safe dish and cover them loosely with a microwave-safe lid or microwave-safe plastic wrap. Microwave on high for 8-10 minutes or until the peppers are tender and the filling is heated through.
