Sweet Potato Black-Eyed Pea Curry

INGREDIENTS

  • 2 cans black-eyed peas

  • 1 cubed sweet potato (large)

  • 1 cup crushed tomatoes

  • 1 cup coconut milk

  • 1 cup finely chopped cabbage (finely chopped)

  • 2 serrano peppers, finely chopped

  • 1โ„2 tablespoon fresh ginger, grated (chopped)

  • 1 teaspoon cumin seeds

  • 1โ„8 teaspoon hing

  • 1 1โ„2 teaspoon curry powder

  • 1 teaspoon salt

INSTRUCTIONS

STEP 1: Add oil to a pan with cumin seeds, Serrano pepper, and ginger sauce for 2 minutes then add in cabbage, sweet potatoes, and salt.

STEP 2: Drain black-eyed peas & add to pan.

STEP 3: Pour in crushed tomatoes, coconut milk, & curry powder.

STEP 4: Mix all together, cover, and cook for 20 minutes or till sweet potatoes are soft (but not mushy).

STEP 5: Garnish with yogurt, pickled chillies and chopped cilantro.

STEP 6: Enjoy with grilled pita or on top with rice.
