  • 4 large organic sweet potatoes or garnet yams

  • 4 tsp avocado oil

  • 2 pinches sea salt (optional)

INSTRUCTIONS

STEP 1: Slice sweet potatoes just under 1/4 inch thick, leaving the skin on.

STEP 2: Heat a large skillet over medium-high heat. Add oil, swirl to coat.

STEP 3: Place sweet potatoes in an even layer, sprinkle with salt (optional), and cover.

STEP 4: Cook for 3-4 minutes until the underside is golden brown, then flip and cover.

STEP 5: Reduce heat slightly, cook for another 3 minutes until golden brown on both sides and fork-tender.

STEP 6: Enjoy as is or serve in breakfast bowls, with hummus, or drizzled with tahini!

STEP 7: Store leftovers covered in the refrigerator for up to 2-3 days. Not freezer friendly. Reheat on the stovetop over medium heat for best results.
