STEP 3: Place sweet potatoes in an even layer, sprinkle with salt (optional), and cover.
STEP 4: Cook for 3-4 minutes until the underside is golden brown, then flip and cover.
STEP 5: Reduce heat slightly, cook for another 3 minutes until golden brown on both sides and fork-tender.
STEP 6: Enjoy as is or serve in breakfast bowls, with hummus, or drizzled with tahini!
STEP 7: Store leftovers covered in the refrigerator for up to 2-3 days. Not freezer friendly. Reheat on the stovetop over medium heat for best results.
