INGREDIENTS

  • 2 tablespoons of olive oil

  • 1/2 onion, finely chopped

  • 1 tablespoon all-purpose flour

  • 1/2 teaspoon sugar

  • 2 cloves of garlic, minced

  • 2 carrots, diced

  • 200 g tomato passata

  • 1000 ml water or vegetable broth

  • 1/4 teaspoon thyme

  • 1/2 teaspoon oregano

  • 200 g (1 can) cooked chickpeas, drained and rinsed

  • 200 g (1 can) cooked white beans, drained and rinsed

  • 250 g tortellini (with pesto or ricotta filling)

  • 1 tablespoon chopped fresh parsley

INSTRUCTIONS

  1. Sautรฉ Aromatics:

    • Heat 2 tablespoons of olive oil in a large pot.

    • Sautรฉ finely chopped onion with flour and sugar for 5 minutes.

    • Add minced garlic and diced carrots, sautรฉ for another 5 minutes.

  2. Simmer Soup:

    • Pour in tomato passata, water or vegetable broth.

    • Season with thyme, oregano, salt, and pepper.

    • Cover and simmer for 15 minutes.

  3. Add Ingredients:

    • Stir in drained chickpeas, white beans, and tortellini.

    • Simmer for 5 more minutes until tortellini are cooked.

  4. Serve:

    • Adjust seasoning if needed.
