INSTRUCTIONS
Heat Oil or Vegan Butter:
Place a non-stick skillet over medium-low heat and add 1 teaspoon of vegetable oil or vegan butter. Allow it to melt and coat the skillet evenly.
Cook Crumbled Tofu:
Once the skillet is heated, add 1/4 cup of crumbled firm tofu to the skillet.
Season the tofu with a pinch of salt and pepper to taste. Stir occasionally and cook for 2-3 minutes until it starts to turn slightly golden brown. This will give it a nice texture and flavor.
Optional: Add Vegan Sausage or Bacon:
If you're using vegan breakfast sausage or plant-based bacon, add it to the skillet with the tofu. Cook it until it's heated through and becomes slightly crispy. This usually takes 2-3 minutes.
Layer Vegan Cheddar Cheese:
Place 1/4 cup of vegan cheddar cheese evenly on one-half of the tortilla.
Add Tofu and Vegan Sausage/Bacon (if using):
Spoon the cooked tofu (and vegan sausage or bacon if using) on top of the cheese.
Fold the Tortilla:
Carefully fold the other half of the tortilla over the fillings, creating a half-moon shape.
Cook Until Golden Brown:
