INGREDIENTS

  • 200 g couscous

  • 1 green bell pepper

  • 1 zucchini

  • 8 cherry tomatoes

  • 1 spring onion

  • 2 carrots

  • 50 g toasted almonds

  • 50 g cashew nuts

  • 2 tablespoons olive oil

  • 1 teaspoon salt

INSTRUCTIONS

  1. Heat olive oil in a large pot over medium heat.

  2. Add diced bell pepper, sliced zucchini, halved cherry tomatoes, sliced spring onion, and diced carrots to the pot. Stir and cook for about 5 minutes until slightly softened.

  3. Pour water into the pot and bring it to a boil.

  4. Once the water is boiling, add couscous to the pot and stir well to combine.

  5. Cover the pot with a lid and let it simmer for about 5 minutes or until the couscous has absorbed all the water and is tender.

  6. Remove the lid and fluff the couscous with a fork.

  7. Stir in toasted almonds and cashew nuts.

  8. Season with salt to taste.
