INSTRUCTIONS
- Heat olive oil in a large pot over medium heat. 
- Add diced bell pepper, sliced zucchini, halved cherry tomatoes, sliced spring onion, and diced carrots to the pot. Stir and cook for about 5 minutes until slightly softened. 
- Pour water into the pot and bring it to a boil. 
- Once the water is boiling, add couscous to the pot and stir well to combine. 
- Cover the pot with a lid and let it simmer for about 5 minutes or until the couscous has absorbed all the water and is tender. 
- Remove the lid and fluff the couscous with a fork. 
- Stir in toasted almonds and cashew nuts. 
- Season with salt to taste.
