  • 800 g (2 cans) peeled tomatoes or diced tomatoes (or 4 fresh tomatoes)

  • 2 bay leaves

  • 400 g red lentils

  • 2 liters vegetable broth (or water and vegetable bouillon cubes)

  • Salt and pepper to taste

  • 1 teaspoon grated lemon zest (or a few drops of vinegar)

  • Parsley for garnish and freshness

INSTRUCTIONS

Prepare lentils: Before using red lentils, rinse them thoroughly under cold water and drain.

Prepare vegetables: Finely chop the onion and garlic. Slice the celery and carrots into rings, and if using fresh tomatoes, dice them.

Make the soup: In a large pot, heat two tablespoons of oil and sautรฉ the onion, celery, and carrots. Once they slightly soften, add garlic, basil, oregano, and paprika. Sautรฉ just until the garlic becomes fragrant, about a minute.

Add rinsed and drained red lentils, bay leaves, tomatoes, and vegetable broth to the pot. Cook for approximately 15 minutes or until the vegetables are tender, and the lentils are cooked.
