INGREDIENTS

  • 500g sweet potatoes, peeled and cut into 2cm chunks

  • 2 red onions, cut into wedges

  • 8 garlic cloves, unpeeled

  • 2 tsp dried thyme

  • 1 tsp dried rosemary

  • 1ยฝ tbsp olive oil

  • 6 skinless chicken thigh fillets, each cut in half

  • 2 lemons, 1 juiced and 1 cut into wedges to serve

  • 1 tsp smoked paprika

  • 350g broccoli, broken into florets

  • 150ml chicken stock

INSTRUCTIONS

Preheat and Prepare: Preheat your oven to 200ยฐC (180ยฐC fan) or 392ยฐF (356ยฐF fan). Place a large roasting pan in the oven while it's heating.

Toss Vegetables: In a large bowl, combine the sweet potatoes, red onions, unpeeled garlic cloves, dried thyme, dried rosemary, and 1 tablespoon of olive oil. Toss until the veggies are well coated.

Roast Vegetables: Carefully remove the hot roasting pan from the oven and spread the vegetable mixture in a single layer. Roast in the oven for 10 minutes.

Season Chicken: While the vegetables roast, season the chicken thigh fillets with salt, pepper, and smoked paprika.

Add Chicken and Lemon: After 10 minutes, remove the pan from the oven. Push the partially roasted vegetables to the sides to make space in the center. Place the seasoned chicken pieces in the center, then add the lemon wedges around the chicken.

Drizzle and Return: Drizzle the lemon juice over the chicken, and then drizzle the remaining olive oil over everything in the pan. Return the pan to the oven and roast for an additional 20 minutes or until the chicken is cooked through, and the veggies are tender.
