INSTRUCTIONS

STEP 1: Heat the olive oil in a large skillet over medium heat. If using, add the beaten eggs and scramble them. Once cooked, remove them from the skillet and set them aside.

STEP 2: In the same skillet, add the diced bacon (optional) and cook until crispy. Remove and set aside.

STEP 3: Add the diced red bell pepper, the whites of the scallions (reserve the green parts for garnish), diced carrots, and minced garlic to the skillet. Sautรฉ for a few minutes until the vegetables start to soften.

STEP 4: Stir in the defrosted peas and cooked rice. Cook for an additional 5-10 minutes, stirring occasionally, until the rice is heated through and begins to crisp slightly.

STEP 5: If you scrambled the eggs, return them to the skillet at this point and stir to combine. If you didn't use eggs but still want to add them, you can make a well in the center of the skillet and pour them in. Stir continuously until they are fully cooked.

STEP 6: Garnish with the reserved green parts of the scallions and the crispy bacon if you're using it. Serve hot, and enjoy your quick fried rice!
