INSTRUCTIONS
Sautรฉ and Simmer
In a large, deep skillet or pot, heat 1 tbsp of extra virgin olive oil over medium-high heat.
Add the chopped red onion and crushed garlic to the skillet. Sautรฉ for 2-3 minutes until fragrant.
Stir in 2 tsp of chopped fresh thyme and the 800g pumpkin chunks. Sautรฉ for an additional 5 minutes or until the pumpkin starts to soften.
Sprinkle in 1 tsp of vegetable stock powder, pour in 1 1/2 cups of water, and add the contents of 2 x 400g cans of baby roma tomatoes. Bring the mixture to a simmer.
Cover the skillet and let it simmer for 5 minutes, allowing the flavors to meld together.
Gnocchi Addition
Uncover the skillet and stir in the 500g packet of shelf-stable gnocchi. Ensure the gnocchi is evenly combined with the other ingredients.
Continue cooking uncovered for an additional 5 minutes or until the gnocchi becomes tender.
Serve and Garnish
To serve, top the dish with fresh baby spinach leaves, crumbled fetta, and extra chopped thyme.
