  • 1 red onion, chopped

  • 3 garlic cloves, crushed

  • 2 tsp chopped fresh thyme, plus extra to garnish

  • 800g pumpkin, cut into 3cm chunks

  • 2 x 400g cans baby roma tomatoes

  • 500g packet shelf-stable gnocchi

  • 60g baby spinach

  • 60g fetta, crumbled

  • 1 1/2 cups water

  • 1 tsp vegetable stock powder

INSTRUCTIONS

Sauté and Simmer

  • In a large, deep skillet or pot, heat 1 tbsp of extra virgin olive oil over medium-high heat.

  • Add the chopped red onion and crushed garlic to the skillet. Sauté for 2-3 minutes until fragrant.

  • Stir in 2 tsp of chopped fresh thyme and the 800g pumpkin chunks. Sauté for an additional 5 minutes or until the pumpkin starts to soften.

  • Sprinkle in 1 tsp of vegetable stock powder, pour in 1 1/2 cups of water, and add the contents of 2 x 400g cans of baby roma tomatoes. Bring the mixture to a simmer.

  • Cover the skillet and let it simmer for 5 minutes, allowing the flavors to meld together.

Gnocchi Addition

  • Uncover the skillet and stir in the 500g packet of shelf-stable gnocchi. Ensure the gnocchi is evenly combined with the other ingredients.

  • Continue cooking uncovered for an additional 5 minutes or until the gnocchi becomes tender.

Serve and Garnish

  • To serve, top the dish with fresh baby spinach leaves, crumbled fetta, and extra chopped thyme.
