INSTRUCTIONS
STEP 1: Begin by ensuring your shrimp is peeled and ready for cooking. Squeeze the juice from half of the lime, which should yield about 0.5 tablespoon of juice. Slice the other half of the lime for later garnish.
STEP 2: In a deep skillet, heat the minced garlic and butter over medium heat. Sauté the garlic for 1-2 minutes until it becomes fragrant.
STEP 3: Add the long-grain white rice to the skillet and continue to sauté for an additional 1-2 minutes. You'll notice a delightful crackling sound as the rice combines with the butter.
STEP 4: Gently pour in the chicken broth, 0.5 tablespoon of lime juice, water, seasoning salt, and your freshly chopped parsley. Give it a good stir to incorporate all the ingredients.
STEP 5: Cover the skillet with a lid and increase the heat to medium-high. Allow the mixture to come to a full boil. Once it's boiling, lower the heat to low and let it simmer for a relaxing 10 minutes.
STEP 6: After 10 minutes of simmering, most of the liquid should be absorbed by the rice. Briefly lift the lid to evenly distribute the shrimp over the rice's surface. Then, cover it again and let it cook on low for an additional 5 minutes.
STEP 7: Remove the skillet from the heat, and allow it to rest, keeping the lid on for an extra five minutes. Once rested, remove the lid. Your shrimp should be beautifully opaque and tinted pink.
STEP 8: Use a fork to gently fluff the rice, mixing the cooked shrimp into it. Add the leftover lime slices and a sprinkle of additional freshly chopped parsley if desired. Serve piping hot.
