INGREDIENTS

  • 1 large onion, ginger, and garlic (blended into a paste)

  • 1 tbsp rapeseed oil

  • 2-3 tbsp tikka curry paste

  • 400g chopped tomatoes

  • 2 tbsp tomato purée

  • ½ tbsp light brown soft sugar

  • 3 cardamom pods (bashed)

  • 200g brown basmati rice

  • 3 tbsp ground almonds

  • 300g raw king prawns

  • 1 tbsp plant milk

  • Naan bread (optional, for serving)

INSTRUCTIONS

STEP 1: Blend onion, ginger, and garlic into a paste.

STEP 2: Heat rapeseed oil in a pan, add the paste, and cook for 8 minutes until golden.

STEP 3: Stir in tikka curry paste and cook for an additional minute.

STEP 4: Add chopped tomatoes, tomato purée, sugar, and cardamom pods. Simmer covered for 10 minutes.

STEP 5: Cook brown basmati rice following package instructions.

STEP 6: Remove cardamom pods, blend the sauce, return it to the pan, and add almonds and prawns. Cook for 5 minutes.

STEP 7: Season to taste and serve with rice and naan bread (optional).
